Cheese Cake de Frutilla

Rendimiento: 2 unidades de 14 cm. de diámetro

Ingredientes:
Manteca 75 Gr.
Azúcar 175 Gr.
Huevos 110 Gr.
Queso Crema 500 Gr.
Harina 90 Gr.
Crema de Leche 250 Gr.
Leche 120 Cc.
Limón y naranja rallado 1 c/u

Base y Glaseado:
Galletitas estilo "vocación", "María" o "maná"
Manteca (1/2 de la cantidad de galletas utilizadas)
Mermelada de frutillas 350 Gr.

Base: reducir las galletas a polvo y trabajar con la mano hasta que se pueda integrar. Cubrir con papel film el molde (que sea del mismo tamaño del que se pondrá a cocinar el cheese cake en el horno) y colocar la mezcla apretando con las manos. Llevar a frío hasta que esté bien firme.

Cheese Cake: batir la manteca pomada con el azúcar a blanco. Agregar los huevos enteros de a uno, cuando están incorporados agregar el queso crema, la leche y la crema de leche. Despues las ralladuras, siempre batiendo a baja velocidad. Por último incorporar la harina tamizada (en batidora o a mano).
Enmantecar y azucarar el molde, (o utilizar acetato). Verter la preparación en el molde y cocinar a baño maría en horno a 150°C mas o menos 40-50 minutos.
Enfriar antes de desmoldar. Para desmoldar calentar los costados del molde. Decorar con coulis o mermelada de frutillas.
  • En la base (como en el caso de la imágen) se puede reemplazar esta receta por un pionono o biscochuelo (cocinado) que irá en el fondo del molde, luego se le derrama la preparación y se cocina todo junto a baño maría.
